Boil two pounds of russet potatoes. Be sure to peel and chop them into large cubes before boiling. Once they are done–you’ll know, if you can easily pierce them with a fork–start to saute your white onions in olive oil in a low until for approximately 10 minutes or until they are caramelized. Now add in milk or heavy whipping cream, butter and seasoning to your potatoes and mash them to your favorite consistency. Next, mix in the onions and serve to your guest.
